Peanut Butter and Banana Baked Oatmeal
GREAT to make ahead and eat through the week!
Ingredients:
1 ½ cups of old fashioned oats
1 teaspoon of ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon baking powder
¼ teaspoon of salt
2 medium overripe bananas
⅓ cup of peanut butter
1 cup of 1% milk / or milk alternative (almond, oat, soy)
3 tablespoons of maple syrup
½ teaspoon of vanilla extract
1 egg, or 1 “flax egg” (1 tablespoon ground flaxseed mixed with 3 tablespoons of water)
Instructions:

Preheat the oven to 375 degrees F

Combine the oats, cinnamon, nutmeg, baking powder, and salt in a bowl and set aside

In another bowl, mash the bananas well, then whisk in the peanut butter, milk, maple syrup, vanilla and egg or flax egg

Whisk the dry ingredients into the wet ingredients until well combined. Pour into an 8×8 inch baking dish coated with nonstick spray

Bake for 35-40 minutes, then slice into 4 pieces and serve warm with additional milk, or topped with a dollop of Greek yogurt, if desired.
